2 lbs new potatoes, scraped
1 medium onion, minced
2 eggs, hard-cooked
1 1/4 cup mayonnaise
1 clove garlic, crushed
Finely grated zest and juice of 1 lemon
1/4 cup red bell pepper, chopped
4 Tbsp. fresh parsley, chopped
Salt and pepper to taste

Bring potatoes to a boil in a saucepan of salted water.
Simmer until done but firm. Drain and cool. Cut potatoes into
large dice, season with salt and pepper and combine with the onion and red pepper.
Shell the hard-cooked eggs and grate them into a mixing bowl, add
mayonnaise. Combine garlic, lemon zest and juice with the mayonnaise
and egg mixture, fold in the chopped parsley and mix thoroughly
into the potatoes. Chill and serve.
